As some of you may know, I am half Puerto Rican. My grandparents were born and raised in Puerto Rico and were experts in Latin cookings (then again, one could argue I am biased). As my cousins and I have gotten older, we realized that it's really important to hold onto our family recipes and to share them with our children, our grandchildren and the people we love.
As Sophia Loren once said, "the most indespensable ingredient of all good home cooking: love those you are cooking for." Last year, my cousins and I compiled many of our family's greatest recipes, from Titi Millie's Habichuelas Rosadas to Tia Paula's Carne Guisada, this book is filled with love, Adobo and most importantly memories.

Titi Millie’s Arroz Con Pollo
Ingredients
1 chicken cutlet per person
Olive oil
Tomato
Peppers
1 large onion
Garlic
White Canilla rice (Goya)
Can of tomato sauce
Can of drained corn
2 packs Sazon con achote
Salt and pepper
Crushed red pepper
2 tbsp. Sofrito
Fresh basil
Oregano
Adobo
Optional:
Chorizo
Ham
Italian Sausage
Shrimp
Directions:
Season cutlets with Adobo and cut up into pieces. Don’t pound.
In a big pot, add olive oil, onions and garlic to cook the chicken. Cook completely on the outside and add whatever other meats you’d like.
Measure out rice (one cup per person). Clean and strain.
Put 4 cups of water in with chicken and a quarter to half a can of tomato sauce.
Add all seasonings and bring to a boil for 10 min so chicken can finish cooking.
When the water is boiling, pour the rice in. The ratio of water to rice has to be perfect. The rice should just be covered – so remove water if need be.
Bring that to a boil uncovered.
Use a tight fitting lid and turn heat all the way on low.
Let cook for exactly 20 minutes.
Have all the veggies diced up and throw them in at around the 15 minute mark and put the lid back on quickly. Leave on top of the pot.
