This recipe is still a work-in-progress and I'd love your help to perfect it. If you make these, please share feedback on the moisture level & flavor!
Ingredients:
1 cup creamy almond butter (make sure it isn’t Justin’s - that brand is way too dry)
2 eggs depending on size
1 tsp vanilla extract
1/4 cup maple syrup
4 tbsp coconut flour
2 tablespoons cornstarch
1 tsp baking soda
Pinch of sea salt
1/2 cup chocolate chips of choice (I use KNOW Foods brand which are dairy free & have a zero glycemic index)
** If you want them to be sweeter, you can add 1/4-1/2 cup of white or brown sugar. Remove the cornstarch if you do this.
Directions:
Head oven to 350 degrees
Spray a 9x9 inch cake pain with cooking spray. I actually used a bread loaf pan because I don’t have a cake pan and it worked fine. You could also use a muffin tin.
Mix almond butter, eggs, vanilla & syrup in a bowl.
In a separate bowl, mix the coconut flour and cornstarch with baking soda. Mix well before combining with wet ingredients.
Add dry ingredients to wet ingredients and mix well.
Add in chocolate chips and mix with a wooden spoon. Don’t overmix or they will dry out.
Pour in the pan and spread out evenly.
Bake at 350 degrees for about 12-15 minutes.
Let cool for 20 minutes before cutting and serving.
