Easy Gluten Free Hard Pretzels

Ingredients:

  • 1 and 1/4 cup warm water

  • 1 packet active dry yeast

  • 1 teaspoon salt

  • 2 tbsp brown sugar

  • 3 tbsp melted unsalted butter

  • 4 cups of strong gluten free flour (I recommend Pamela’s Bread Flour)

  • 1 Egg (+ 1/4 cup water for egg wash)

  • 1 tbsp salt

Baking Soda Bath:

  • Big pot of boiling water

  • 1/2 cup baking soda

Directions:

  • Whisk the yeast into warm water and sit for one minute. Whisk in salt, brown sugar and melted butter. Mix.

  • Add first 3 cups of flour and mix in with a wooden spoon. Keep adding last cup until the dough isn’t sticky anymore. I use my hands - it’s easier.

  • Knead the dough for 5 minutes and shape into a ball. Cover the ball with a wet paper towel and let rise for about 10 minutes. It won’t rise much.

  • In meantime, set water to boil with baking soda on the stove and preheat the oven to 400 degrees. You’ll want to line a baking sheet with parchment paper.

  • Rip off a piece of dough about the size of a ball you’d make a cookie with. Roll it out into a snake-like shape. Thickness will depend on your pretzel preference. I usually do a variety of shapes and sizes.

  • Using a slotted spoon or spatula, put one pretzel on it and dunk into the boiling water. Hold for 30 seconds and transfer to baking sheet. Repeat until you have done all of the pretzels.

  • Beat egg in a small bowl with 1/4 cup of water. Spread over eat pretzel and sprinkle with sea salt (Maldon’s is my favorite).

  • Bake on 400 degrees until the outside is the color you want. I recommend 15 minutes.

  • Then, lower the oven to 300 degrees and bake another 8 minutes to fully harden the inside.
